Ingredients
1 kg of Lugrade Dry Salted Skate
1 kg of vine tomatoes
3 bell peppers (green, red, and yellow)
3 garlic cloves
1 white onion
1 bay leaf
500 g of boiled Aljezur sweet potato
170 ml of olive oil
Salt, pepper, and fresh coriander to taste
Preparation

In a cataplana, combine the olive oil, garlic, onion, bay leaf, tomatoes, and sweet potato, and sauté gently.

 

 

Next, add water and the soaked Skate, then close the cataplana and cook over steam.

 

 

When the Skate is almost cooked, add the bell peppers, close the cataplana again, and continue cooking until everything is fully done.

 

Finish with freshly ground black pepper and fresh coriander before serving.
