Ingredients

1 kg of Lugrade Dry Salted Skate
1 kg of white potatoes, for boiling
6 eggs
150 g of mayonnaise
100 g of arugula
100 g of carrots
20 g of fresh parsley
Salt, black pepper, and vinegar to taste

Preparation

Boil the potatoes and diced carrots in salted water. Once the water comes to a boil, add the Skate and cook for about 5 minutes. In a separate saucepan, boil the eggs.

 

 

Once all the ingredients have cooled, combine the potatoes and carrots with the mayonnaise in a large bowl. Add the chopped eggs, arugula, and finally the flaked Skate. Adjust the seasoning with salt, black pepper, and vinegar to taste.

 

 

Finish by sprinkling with freshly chopped parsley and chill in the refrigerator.

 

 

This dish is ideal for hot summer days and should be served cold.
