Bake the potatoes in their skins with plenty of coarse salt. Add a little water to the baking tray to prevent the potatoes from drying out.
Drizzle the previously soaked Skate with olive oil and grill until cooked through.
Blanch the turnip greens.
Sauté the onions, garlic, and bay leaves in plenty of olive oil, then splash with a little vinegar.
In a baking dish, arrange the crushed potatoes, the grilled Skate, and the turnip greens. Drizzle the potatoes and greens with olive oil and add the sliced garlic. Spoon the sautéed onions over the Skate and adjust the seasoning with salt and pepper.
Bake for about 10 minutes at 180°C.
Finish with freshly chopped parsley before serving.
