Ingredients
1 kg of Lugrade Dry Salted Skate
800 g of white potatoes for boiling
8 cloves of garlic
150 ml of olive oil
100 ml of vinegar
Salt, pepper, coriander to taste
Preparation

Boil the potatoes in plenty of salted water in a saucepan.

 

Once the potatoes are cooked, add the previously soaked skate, along with the vinegar, olive oil, and garlic, boil for 2 minutes, and turn off the heat.

 

Set aside with the saucepan covered for a few minutes to finish cooking the skate.

 

Before serving, add coriander or parsley and season with salt and pepper.

 

Chef Noélia’s tip: In a glass, mix the mayonnaise with a little of the skate broth, shake well, and pour over the skate when finished cooking.
