4 Lugrade Cod Loins
2 Red Peppers
2 Green Peppers
4 Onions
4 Garlic cloves
3 Ripe Tomatoes
Paprika
Saffron
100ml White Wine
100gr Coriander
200ml Olive Oil
Start by peeling all the vegetables. As if it were a fish stew, in a pot, place layer by layer the rolled garlic, the onions, the sliced peppers and the tomatoes into cubes. Drizzle with olive oil and sauté everything very well. Season with paprika and saffron. After well sauté refresh with white wine. Add the cod and add a little water. Season with salt, cover the pot with the lid and let it cook. When the cod starts to flake it is ready to serve. Chop coriander and place on top.
Tip: You can add to this dish fried bread slices in olive oil.
